Copmanthorpe forced several corners in the first 15 minutes but fell behind against the run of play.
From the restart, Samuel Fox released Nick May on the left and he beat two defenders and then scored inside the near post.
A few minutes later, Tom Horseman guided the ball home to make it 2-1 to Copmanthorpe.
Just before the interval, Carr equalised with a well-taken shot from the edge of the box.
After 50 minutes, Harry Gregory hit a scorching half volley from the edge of the area to regain the lead for Cop who went 4-2 up when Vinnie Dhesi rounded the goalkeeper.
Carr rallied in windy conditions in the final period and netted from a free kick on the edge of the box but Cop held out with Sam Nightingale and his back four keeping cool.
Fulford Juniors Under-12s lifted the York City Supporters' Trust Ryedale Junior League Plate final in spectacular fashion.
They looked out of it as they trailed 4-1 to Rawcliffe in the semi-final but fought back to win 8-4 in extra time.
In the final they gave a solid all-round performance to beat North Duffield Dragons 3-0.
