THE tastes of Georgian Yorkshire were sampled by visitors to historic Fairfax House as part of the ongoing York Food & Drink Festival.

This weekend saw food historian Peter Brears tempt visitors with his cakes and baking all prepared using recipes from the great and good of 18th century York.

The creations included Whitby ginger bread, which Mr Brears described as “heavy as a house brick”, and Ouse Bridge Cake, a type of spicy bun.

He said: “There was about 30 different items of bakery; all of them from recipe books from 18th century Yorkshire ladies. We have Yorkshire gingerbread, which is white bread crumbs boiled up in claret with lots of spices until it forms a really thick paste, then you make it into cakes.

“Then we have the York or Whitby gingerbread which is as heavy as a house brick. At Christmas they used to sell 12 tonnes of it in Whitby because it was good to last all year for sea captains.”
