A FORMER baker’s shop in York city centre is set to become a takeaway selling Belgian and Dutch style chips.

Candice and Myles Matthews have applied to City of York Council for permission for the change of use at 13 Lendal, a Grade II listed building formerly occupied by Thomas the Baker.

They say in their application that in Dukes Chips, they are seeking to create the ‘authentic chip takeaway experience inspired by the traditional preparation and cooking processes seen in chip shops in continental Europe, most notably those of Belgium and Holland.’

They said: “As per tradition, the chips will be served in cones of varying sizes with a large selection of sauces for customers to choose, ranging from the traditional to the experimental.”

They said the chips would be made from fresh hand cut potatoes cooked on site, and it would be a unique business which would add to the vitality of the city centre.

They also said an air purification system would be introduced into the existing extraction ducting which would remove ‘odorous compounds’ created by the cooking process.
