March is when celeriac really comes into its own and we absolutely love using it in as many of our dishes as possible.

This super flavourful root veg is not only insanely delicious, but it's also packed with essential vitamins and minerals for supporting good health.

Celeriac is especially high in vitamin K, great for supporting the bones, along with immune-boosting copper and nerve-relaxing magnesium.

Healthy celeriac fries

Ingredients (serves 2)

1 celeriac
2tbsp coconut oil, melted
1 clove garlic, finely chopped
Sea salt
Black pepper 

Method 

1. Simply preheat your oven to 180 degrees before peeling and chopping the celeriac in to fries.

2. Fill a pan with cold water and add the celeriac, letting them boil.

3. Drain the water away, transfer in to a baking dish then drizzle with the coconut oil and season with sea salt, black pepper and garlic.

4. Bake in the oven for 35-40 minutes until nice and golden on the outside and dig in!
