IN response to the letter from Olga Shepherdson (What the hell is this Government thinking about? October 16) I wanted to provide a little more information about HACCP systems. Food businesses have been required to use HACCP (Hazard Analysis Critical Control Point) for several years.

A change in European legislation has meant that, since January this year, HACCP systems now have to be written down. The level of documentation required depends of the type of food business. The key purpose of HACCP is to ensure that businesses supply food that is safe to eat and will not cause food poisoning.

Officers from the council's food and safety unit are able to offer free advice to businesses on general food issues and HACCP. The Food Standards Agency has also launched a free pack, called Safer Food Better Business, to help businesses put in place HACCP systems.
