Kyle Room, a National Diploma Hospitality student at York College, reached the final of a national cookery competition organised by Sainsbury’s.
To enter, Kyle sent Sainsbury’s his recipe for fillet of seabass on a tomato and basil tartlet with a Mediterranean sauce. He went through two heats, getting through to the final 12. Kyle demonstrated his recipe in the grand final, in front of an audience of 4,000 people and now his recipe has been published in Sainsbury’s The Big Cook Off recipe book.
Kyle, 19, an ex-Fulford School pupil, said: “My mum was crying with joy and I just couldn’t believe it. I was inspired to cook by my Italian grandma, and this was one of her favourite recipes. I added my own twist to the recipe and I know she would still love it.”
