Brekeriet, SE, Rhuboise - £5.10, 6 per cent

DESPITE taking their native Sweden by storm, Brekeriet remain relatively unknown in the UK. Despite spending the last few years producing stunning fruit, sour, and Brettanomyces fermented ales, they’ve yet to find their audience. If you’re a fan of Wild Beer Co, and their take on rustic innovation, you’ll almost certainly find a lot to love in this Swedish outfit.

Rhuboise is one of Brekeriet’s mixed-fermentation ales. Brewed with regular brewer’s yeast and Brettanomyces (most famously giving Orval its peppery aroma), Rhuboise is laden with raspberries, rhubarb, and vanilla beans to create a sharp and aromatic ale.

Rhuboise pours with a crisp effervescence, a flash of pink head dropping instantly. The beer itself is crystal clear, with a delicate copper hue tinged with a blush of rose.

Aromas of farmhouse cider – crisp, sweet and tangy in equal measure, are pushed further by a sweet apple tang and the cosy scent of warm hay.

Rhuboise is light bodied and crisp with a moderate sweetness, led by a chewy vanilla aroma that gradually breaks down amid tart lemon juice and raspberries. As the tartness of these recedes, the vanilla is allowed to mingle with tangy, woody rhubarb, biscuit oats, and the warm embrace of scrumpy cider.
