THIS simple but packed with flavour slice can be knocked up in 15 minutes due to their being no pre cooking of ingredients before baking.
Add to a summer salad and you are set for a scrummy tea.
Fig and goats cheese puff pastry slice with roast red peppers and caramelised onions
Ingredients for four
200g puff pastry
1 red pepper
40g caramelised onions
2 figs
200g (4 rounds of goats cheese log)
1 sprig rosemary
1 egg
Method
Roll the puff pastry into a rectangle 3mm thick around 18cm x 30cm. Cut two 2cm strips from the two long sides.
Egg wash the long edges and the top of the strips and then lay the strips on the edge to create two raised edges
Spread the caramelised onions along the bottom of the slice, half the goats cheese rounds and lay them on top of the onion.
Slice the red pepper thinly and lay down the inside of the raised edge.
Cut the fig into quarters and place on top of each half round of goats cheese, finally sprinkle with roughly chopped rosemary
Place in the centre of a pre heated oven on 200c for 14 minutes
Serve warm
