THE team behind a Michelin-starred chef’s new restaurant in York has applied for a licence for the venture.

Chef Tommy Banks, whose restaurant The Black Swan at Oldstead was named the world’s best rated restaurant in the annual TripAdvisor awards in October last year, announced plans to open a new venture in York in April.

The Press reported last week that the restaurant, to be named Roots York, would open at the site of the former Bay Horse pub in Marygate.

City of York Council has now received a licensing application for the building from Roots York.

The application requests a licence for the premises to supply alcohol between 11am and 11.30pm, Monday to Sunday. And it says the opening hours of the new restaurant will be from 11am to midnight.

The Black Swan at Oldstead serves dinner every evening from 6pm but only opens for lunch one day a week, on Saturdays.

Brothers Tommy and James Banks took over the Black Swan when they were just 17 and 19 years old, and Tommy was the youngest British head chef to ever win a Michelin star, at the age of 24.

A statement on the Roots York website says: “Roots will offer casual and playful sharing dishes with the same focus on quality cooking that Tommy has become so famous for.”

No firm opening date for the York venue has been announced. The Bay Horse was built as a pub in 1893-94, from designs by W G Penty. In the past there has also been plans to turn the building into flats and offices.
