FURTHER to A V Martin’s letter about Walnut Whips, it was factually correct apart from the very last sentence.
Walnut Whips were not handmade in Edinburgh.
I was in the engineering department at York and we were responsible for the installation and commissioning of the machinery.
Initially the chocolate was piped onto the outside of a former. This produced the twist in the chocolate.
This method was later changed in favour of moulding the cone, which could be filled with cream and locked off.
In the days before mechanisation Walnut Whips were handmade by girls working in the Cream Department.
They piped the base chocolate, then a cone of whipped cream, and the final coating of chocolate.
My late mother-in-law was one of the girls.
