This cake is a really great if you are in a hurry and don’t want to mess about beating up individual ingredients. It tastes great, keeps well – you will love it.

You will need: 1 large bowl, wooden spoon, small jug (either plastic or Pyrex), set of weighing cups (these are really inexpensive and sold in all supermarkets). A little margarine to grease your tins with. Some silicone/greaseproof paper to line your baking tin with. One large 10-inch cake tin (either square or round, or a nice square roasting tin). Grease whichever tin you decide to use and line with the silicone/greaseproof paper.

Ingredients

450g self-raising flour
1 tsp of mixed spice
1 tsp cinnamon
1 tsp ginger
1 tsp bicarbonate of soda
3 eggs
1 cup sunflower oil
1 cup of honey (put into your microwave for about 10 seconds to soften so you can pour )
1 cup boiling water
50 g flaked almonds
50 g mixed peel

Method

Pre heat your oven to gas mark 3/170C.

Sift all your dry ingredients together in your large bowl.

Add your mixed peel, covering them in your flour mix. Beat eggs and oil in your jug.

Mix runny honey with boiling water.

Put all your wet ingredients into your large bowl of flour and stir really well. The bicarbonate of soda makes it bubble and rise; don’t be alarmed it’s doing its job!

When you are happy that your mixture is nice and smooth, pour into your prepared tin, now sprinkle on top your flaked almonds.

Place into your oven and bake for approx. one hour. You will know when it’s ready as it will have a firm top and be shrinking from the sides of your tin. It turns a lovely golden colour and smells lovely.

This cake is better if you leave it for a day to cool and all the flavours develop. That’s if you can leave it alone that long as it smells delicious!

I love to ice mine with a thin lemon icing and I make this with: 50g unsalted butter melted 200g icing sugar (sieve if it’s lumpy) Juice of 1 lemon Put all in a small bowl and stir until you get a nice smooth icing.

If it’s too runny, add more icing sugar; if too thick, a little more lemon juice. Then pour over the cake and let it run down the sides.
