Simon Long of Shambles Kitchen in York, rustles up a healthy alternative to pasta.
I recently got a spiraliser - a kitchen gadget which creates nutritious 'pasta' and 'noodles' from everyday fruit and vegetables. If you haven't got one, I'd thoroughly recommend it.
They're about £30 on Amazon and can turn most vegetables into spaghetti. I've been doing it with sweet potatoes, celeriac, squash, courgettes, etc. You'll need one for this recipe.
Serves two
Ingredients:
2 courgettes
1 soft avocado
1 lemon, zest and juice
Olive oil
1 clove garlic
10 baby plum tomatoes
10 sugar snaps
Grated Parmesan
Small bunch of fresh basil
Method:
1. Heat oil on a medium heat in sauté or frying pan and spiralise the courgettes.
2. Add crushed garlic cloves into the hot oil and sauté for 1 min. Be very careful not to burn it.
3. Add the spiralised courgettes into the pan, season and toss. Keep tossing it every couple of minutes.
4. Zest the lemon and zest to one side.
5. Crush the avocado in a bowl and add squeezed lemon juice, a tablespoon of olive oil, salt and pepper.
6. Stir avocado mixture into the courgette, toss and turn heat off.
7. Slice baby plum tomatoes and sugar snaps in half, down their lengths.
8. Put courgette mixture onto two plates. Evenly scatter the tomatoes and sugar snaps on top.
8. Pick the basil leaves off their stalks and place them, whole, on top. Then scatter Parmesan liberally.
