I FIRST tried this amazing Banana Bread recipe when it was made by family friend Momma B - the mum of my sister’s partner, Phil.
It’s a Ghanaian recipe great for using up over-ripe bananas.
I asked for the recipe, and since then it’s become one of the best sellers in Shambles Kitchen.
Ingredients
225g self raising flour
100g softened butter
100g light brown sugar
1/2 teasp mixed spice or nutmeg
1 Tablespoon Clear honey
100g sultanas
100g cornflakes or branflakes
500g over ripe bananas
2 eggs
Method
Pre heat oven to gas mark 4/ 180c/ 160c fan assisted.
Butter a 2lb loaf tin. And line with baking parchment.
Sieve the flour and mixed spice into a mixing bowl. Then add all other ingredients.
Beat until well mixed. pour into loaf tin and bake for about 30 mins.
Then turn the heat down and continue cooking on gas mark 3/ 170c/ 150c fan assisted and bake for about 1/2 hour until a skewer comes out clean.
Cooking times will wary depending on your oven so keep an eye on it.
