A BAKERY which started out trading from a market stall one day a week has opened the doors to its first fixed shop.

Bluebird Bakery, founded by Al Kippax in 2011, has opened in Micklegate in the former Blake Head Book Shop.

The business, which will trade from the shop and markets over different days in the week, has grown to sell a thousand loaves a week to customers and supply a range of restaurants, delis and shops across York.

Mr Kippax said: "I was looking for a good opportunity to help transform York into a city which is at the forefront of foodie culture.

"Now that we're sure there's a real enthusiasm out there can open our doors to a new, permanent home. We're really excited about the move."

Bluebird Bakery will share the space in Micklegate with The Rattle Owl - a new casual dining restaurant due to open in January.

Owner, Clarissa O'Callaghan, said: "Sharing the kitchen and front of house space with a business that has the same ethos makes sense both commercially and practically. It is a model for the development of the independent retail and restaurant sector in a challenging economy."
