TWO Yorkshire Wolds business are using York Food Festival to launch the result of a collaboration of theirexpertise.
Three Peaks Yorkshire Biltong has been produced by Thornhome farmers Chris and Charlotte Shipley and artisan producer Simon Barrett of Thixendale.
The collaboration came about as a following a conversation between Mr Barrett and Mr Shipley at Malton Food Festival earlier in the year.
Mr and Mrs Shipley are local producers of Biltong, which is a mildly spiced and salted air-dried meat.
After importing equipment from South Africa they started producing the delicacy from cuts of their own home-grown, grass-fed beef which is seasoned with a home-made dry spice rub.
In the case of Three Peaks Yorkshire Biltong, the dry rub is replaced with a coating of Mr Barrett’s Three Peaks Chilli Jam.
